Recipe: Vegan Banana Chocolate Chip Pancakes

Pancakes are my absolute favorite breakfast food, bananas are one of my favorite fruits, and who doesn’t love chocolate?  Combine those all together and what do you have?  AMAZING pancakes!IMG_20150325_181959

The basis for my pancake recipe is from The Post Punk Kitchen:

1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt

1 cup almond milk (or soy milk)
2 teaspoons apple cider vinegar
1 tablespoon ground flax seeds
1/2 cup water
3 tablespoons canola oil
1/2 teaspoon pure vanilla extract

Isa’s Puffy Pillow Pancakes make a delightful pancake–perfectly airy and light.  In this basis I move from this base by adding banana slices and chocolate chips.  You can either add to the pancake batter, use to top the pancakes, or both!  Tonight, I was particularly wanting  lot of banana and just a slight touch of chocolate chips.  For the extra ingredients, I used:

2 ripe bananas

2 tbsp. of chocolate chips

maple syrup

First, prepare the batter and while you’re letting it sit (so the gluten forms), get started on cutting your banana.  I add 1 banana to the batter and save the other one for topping.  Here, you could add the chocolate chips to the batter, or wait until your ‘cakes are finished cooking to add.  Once you have finished making all of the pancakes, plate and add maple syrup.  Enjoy!
